How often should a half maple syrup / half water mix be changed?

I change my every third day.

You want to change any sugar solutions daily because it'll quickly be colonized by microbes and start to undergo fermentation.

Sniff-test the solution to check if it's started fermenting. It should start smelling sour or yeasty if it requires changing.
