Flake Soil Newbie

I have several batches of oak flake soil going for my rhinoceros beetle larvae using the wheat bran method. So far it's going nice, smelling like wine and getting pretty warm, currently on day 70 and it's turning a nice chocolate brown. I've heard of people fermenting longer for rhinos, and even fermenting twice, but I haven't been able to find good information on fermenting soil for long periods of time.

How long is too long to let it ferment, and does 'fermenting twice' mean you'd have to reintroduce the wheat bran again? Or do you just add more yeast and let it go from there? 

I've also heard of people mixing dried oak leaves with the substrate, but I've seen conflicting information about weather or not the leaves should be decayed or just not freshly fallen. Anyone have experience with mixing leaves in their substrate? Thanks!
